Recipe: Summer salad with peaches, peppers & popcorn with pesto

Recette : Salade d'été aux pêches, poivrons & popcorn au pesto

Ingredients :

  • 2 peaches
  • 2 tablespoons of flower honey
  • Rosemary (3 sprigs)
  • Sage leaves (3 leaves)
  • 1 arugula salad
  • 2 peppers
  • 1/2 pack of cherry tomatoes
  • 3 tablespoons of homemade pesto
  • 2 handfuls of Swiss popcorn with Pesto or Tomato & Oregano
  • 1 artisanal burrata
  • Fresh basil
  • Salt & pepper

Homemade Pesto Recipe :

  • 50 g fresh basil
  • 25 g of skinless almonds
  • 25 g pine nuts
  • 10 tablespoons of olive oil
  • 30 g grated parmesan cheese
  • 20 g grated pecorino
  • 1/2 clove of garlic
  • 2 pinches of salt & pepper

Wash the basil without drying it (to keep the leaves moist). Peel the garlic clove, remove the germ and cut it in half. Mix the basil, garlic, almonds and pine nuts. Then add the olive oil, cheese and season.

Recipe :

1. Wash and cut the peaches in half, remove the pits and cut them into fairly thin wedges. Then place them on a dish, pour the honey and fresh rosemary, add the sage leaves and bake for 10 minutes at 200°C.

2. Thinly slice the peppers and set aside.

3. Cut each cherry tomato in half and set them aside as well.

4. Take a large plate and spread the arugula evenly (this will be the base of your salad). 

5. Take the burrata and place it in the middle of the plate on the bed of arugula.

6. Take the roasted peach slices, cherry tomatoes, and pepper slices and arrange them around the burrata, as shown in the photo. 

7. Season with salt and pepper and the homemade pesto. 

8. Take the Pesto or Tomato & Oregano Popcorn and sprinkle them over the dish. 

9. Before serving, add a few basil leaves or other herbs of your choice.
